'Pie Guy' has pie down pat

LEESVILLE -- On the edge of Leesville, there's a baker on wheels that has pies down pat.

Roger Emmons, a Minnesota native, has been baking for years and when he retired from the Army, he made pastries his full-time, honest passion.

"I had been baking pies for years, but I didn't really tell anybody that, you know, being in the infantry," he said, chuckling.

Emmons is known in the area -- and beyond -- as the "Pie Guy." He has 50 flavors, even a Leesville specialty called "Shark Bite" which has graham cracker crust, toffee bits, a layer of brownie, homemade peanut butter pudding and, of course, chocolate mousse.

"We have a S'mores pie, coconut cream, strawberry, chocolate-covered strawberry ...," Emmons said, just to name a few.

Emmons parks his mobile kitchen at MudBugs at 1205 North 5th Street. He and the owner have an agreement. If folks don't like crawfish, they can visit the Pie Guy for savory fare and eat with the crawfish lovers at MudBugs.

"We're not just doing pies anymore. We also do our own pulled pork sandwiches. We do our own Philly cheese steak, we do quesadillas. We do our own handcut fries. We do breakfast burritos in the morning," he said.

Emmons' pies have been in high demand. Around Thanksgiving, he sold around 168 pies, and for Christmas, he worked three days straight. He makes pies by order, but keeps a few on hand for those who stop in.

Emmons does get help from his family. He and his wife have five children, all grown, he said.

Emmons has clients outside of Leesville, too. He said many make the drive north on U.S. 171 from DeRidder. He said he has sold pies to people as far away as Baton Rouge. He is currently looking at taking his trailer to Alexandria sometimes, and to DeRidder.

Emmons said ultimately, baking -- and cooking -- is therapeutic. He said he gets a lot of satisfaction from meeting people and making them something good to eat.

"It's actually a good therapy because you use all of your senses when you do it. You have the visual, the smell, the touch, the taste -- all the senses come together. It takes you away from all of the problems of day-to-day life," he said.
